Japanese Soba Salmon Noodles

A recipe designed to suit your Japanese food cravings.



This is so simple yet so delicious and i can't highly recommend this enough.

You can always interchange the ingredients to this one. It's the sauce that makes this so so yummy! and well maybe the edamame beans because they are tasty as!


Here is what you will need:

270g of Japanese Soba noodles cooked to packet instructions.

1/2 bunch or 4 stems of spring onions cut on a diagonal

2 bunches of broccolini or 1 head of broccoli

1 cup of edamame beans (frozen or cooked)

600g or 2 fillets of fresh salmon

1/4 of soy sauce

1 tablespoon of sesame oil

1 tablespoon of grated fresh ginger

1/2 cup of water.


Coconut oil for cooking the salmon

2 tablespoons o black sesame seeds for decoration.

More soy sauce will be needed to add in to the noodles.


Method:

1. To make the marinade for the salmon. Combine the seasme oil, soy sauce and ginger all together. Place with the salmon and set aside for 15 minutes. The longer you leave it the more saucy it will taste!

2. In a saucepan or wok if you have one. Stir fry the spring onions for two minutes and then add the broccolini, edamame, water and a dash of soy sauce. Cook for 3-4 minutes or until the liquid has reduced slightly. Add the noodles to the saucepan and toss around. Set aside.

3. On a saucepan use the coconut oil on high heat to cook the salmon turning after 3-5 minutes. Allow the salmon to be cooked right through and then serve on top of the noodles, using the rest of the juices from the marinade to pour over the top.


And there you have it! A easy delicious recipe to make for yourself or a family dinner.
