This version gently tonifies Blood, supports digestion, and is easy on the system.

Ingredients:

  • 1 organic chicken carcass (with some meat, skin, and bones)

  • 1 thumb of fresh ginger (sliced)

  • 2 cloves garlic (crushed)

  • 2 tbsp apple cider vinegar

  • 1 carrot (chopped)

  • 1 stalk celery or a handful of celery leaves

  • Optional: 2 red dates (jujube), 5 slices of astragalus root (Huang Qi)

  • Filtered water (enough to cover)

  • Sea salt to taste

Instructions:

  1. Place all ingredients in a large pot or slow cooker.

  2. Cover with water and let sit for 30 minutes to let the vinegar draw out minerals.

  3. Bring to a boil, then reduce to a low simmer.

  4. Simmer for 6–12 hours (or up to 24 hours if you're using a slow cooker).

  5. Strain, taste, and adjust salt.

  6. Sip warm as a tea or store in the fridge/freezer for later use.
